Recently, grape seed has come to the attention of the medical community as a source of powerful antioxidants, called procyanidolic oligomers, also known as OPC or PCO.

Grape seed contains antioxidants that can eliminate free radicals in the brain, the arteries, and in the eye. Many diseases are attributed in part to free radical damage, including macular degeneration, heart disease, and cancer.

The most powerful antioxidant in grape seed , OPC, is 20 times more powerful than vitamin C and 50 times more powerful than vitamin E. What's more, it can stay in the body for up to three days after it is ingested, unlike vitamins C and E, which are expelled from the body after about one day.

The benefit of grape seed was first explored when scientists discovered a low rate of heart disease among the French. This struck them as strange, because French diets tend to include many foods that usually contribute to heart disease.

The answer was found in French red wines. Red wine is rich in OPC, because the OPC-laden skin of the grape is fermented with the fruit of the grape. This contributes greatly to the cardiovascular health of moderate red wine drinkers.

The power of grape seed is available in grape seed extract , which comes in a pill form. It is made from the seeds of the grape, and sometimes includes grape skin extract and red wine extract. The OPC in grape seed extract is a bioflavonoid, which goes directly to the tissue, so it is easily absorbed.

Grape Seed Oils:

Another way to get antioxidants from grape seed is with grape seed oil . Grape seed oil is an amazing cooking oil for many reasons. For one, it contains high numbers of antioxidants. Unlike most antioxidant-containing oils, like olive oil, it can be heated to a very high temperature before losing its antioxidant properties-up to 485 degrees.

It also has a lighter taste than olive oil, so it can be used as a salad dressing or a marinade without adding an overpowering flavor. Not only that, it takes about half the amount of grape seed oil to do the same as other oils.

Grape seed oil has many of the same health benefits as olive oil, including lowering the bad LDL cholesterol without changing the good HDL cholesterol, and contains vitamin E and omega 6 essential fatty acids.
