Design Benefit. Aircore cookware are dual-wall vessels with an insulating air gap between them. The advantage of this design is that once you bring the food up to the correct cooking temperature (shown by an indicator on the pot lid), you can turn off the burner and let the food cook in the insulated pot until done. This is similar in principle to other waterless cookware brands.
