Perfect For Open Kitchen Entertaining. All Calphalon cookware is well designed and well built. Much of it is downright handsome; it's marketed specifically for the kind of lifestyle that involves open kitchen entertaining, bringing the food to the table directly in the pan.
Calphalon One cookware is a hard-anodized surface infused with a polymer, (compare Scanpan cookware). Calphalon claims you can use metal utensils on this surface and get it hot enough for searing and grilling; they offer a lifetime warranty on it.
Calphalon Tri-Ply Stainless cookware has a polished stainless exterior and a brush-finish stainless interior (compare All Clad cookware) with an aluminum core for even heating. The Tri-Ply construction is available in both the traditional shapes and the Calphalon Contemporary cookware line.
Calphalon Contemporary Nonstick cookware consists of conventional hard-anodized pans with nonstick interiors, but styled to be part of the Contemporary line.
The Simply Calphalon line is the lowest-price line. These Calphalon stainless steel cookware items are similar to the Tri-Ply line, but the aluminum core is only on the pan bottom; it does not extend up the sides. The nonstick items are similar in construction to the Contemporary Nonstick, but the shapes are more traditional and they have stainless steel covers instead of tempered glass covers.
The Calphalon Tri-Ply Copper line has a lot of eye appeal. The exterior is brushed copper; there is an aluminum core layer; and the interior is brushed stainless steel (again, compare All Clad cookware, with its polished surfaces). Lids are brushed stainless steel.
Aluminum No Longer Offered. What happened to the old Calphalon, the line that was just hard-anodized aluminum inside and out, without the nonstick surface? It's gone, a victim of misplaced consumer nervousness about aluminum. But Calphalon One is definitely worth a look-see.
