Circulon cookware began as hard-anodized aluminum to compete head-to-head with Calphalon cookware. The advantage was the "Hi-Low" nonstick system, a series of closely spaced, raised, concentric circles. These presumably work the way a grill works, holding the solid food up a little bit and allowing liquids to fill the troughs and protect the solids from scorching.
Seven Lines To Pick From. The Circulon cookware brand has proliferated to encompass seven lines. These differ primarily in the exterior finish, the type of lid, and the type of handle. All now include a nonstick coating on the inside (and some on the outside as well) rather than just the titanium-doped hard-anodized coating. The Style line has colored enamel exteriors, and it is available with a stainless-steel-clad exterior, too.
Other Circulon Gear. In addition to the Total, Elite, Premier, Steel, Circulon 2, Classic, and Style lines, Circulon also makes an electric frying pan and a line of nylon-head (non-scratch) dishwasher-proof accessories.
