Tips For Deep Fat Fryer Cooking

  • Allow enough time to prepare batter-dipped foods. Depending on the coating method, it may require anywhere from half an hour to several hours in the refrigerator somewhere in the coating process.

  • Don't use an old electric deep fryer unless you are positive it is in good working order. Check for a frayed cord or a scorched plug. If you have any doubt at all, either have the electric deep fryer inspected by a competent appliance repair person or throw it out and buy a new one. If you don't think it's safe for you to use, don't donate it to a thrift store; just discard it.

  • Deep fryers require the recommended temperature for the food your are making, generally between 350 and 375 Fahrenheit. Heating oil excessively greatly increases the risk of fire.

  • Have a suitable fire extinguisher, in good working order, within reach. Ensure that you know how to operate it.

  • Have a first aid kit on hand. Burns are best treated by immediately running cold water over the burned area or immersing the area in cold water.

  • If you are using a deep fat fryer indoors, then clean the filter in your stove hood or vent fan and turn the fan on its highest setting before you start; clean the filter again afterwards.

  • If you are using a turkey deep fryer on the stove rather than an electric deep fryer, use a frying thermometer to ensure the fat is hot enough. Use your biggest burner, at least 12,000 BTUs per hour but preferably bigger than that.

  • Deep fryers work best with only a few pieces at a time. The amount that the fat temperature drops when you put cold food in it is proportional to the amount you put in. A home fryer is not like a commercial unit holding five gallons of fat. So take your time. Cold fat makes for greasy food rather than crisp food.

  • Wear appropriate personal protective equipment - long potholder gloves, glasses or goggles, an apron, a hat or toque, long pants, long sleeves, closed shoes - and use long-handled tools.

  • Use a fat designed for frying. Highly saturated fats withstand heat better than unsaturated oils. They also tend to soak into the food less. So even though you may think of them as unhealthful fats, you'll be consuming considerably less of them. Light oils break down (oxidize or rancidify) fairly quickly; that's not good for you, either. Lard or solid vegetable shortening is a good choice.

  • If at all possible, work outdoors. Obviously this is an absolute requirement for using a turkey fryer, but it's a good idea for any deep-frying, as it keeps the mess and the lingering odors out of the house. You can fire up the gas grill if you're using a turkey deep fryer; that's likely to put out more BTUs per hour than your stove in any case.

  • Don't burn the house down. If you are using a turkey deep fryer, keep it away and downhill from the house. Plan ahead for your lowering and lifting mechanism. This can be homemade, but it needs to be designed with personal safety in mind.

  • Don't buy a bigger turkey than the deep fryer is designed for.

  • Figure out ahead of time what you're going to do with the used fat. If you have room in the freezer for it and want to use it again, fine; otherwise, maybe you know someone whose vehicle is converted for biodiesel? Pouring fat down the drain is not recommended anywhere (although your plumber will thank you) and may not be legal in your locale.
