Cooking equipment has to be well made, but you also have to select the correct cooking equipment for the situation. What all kinds of cooking equipment have in common is that the materials and design have to help you, as the cook, prepare food easily and well.
Industrial Scale Cooking. Where different kinds of cooking equipment differ is in scale, design details, and, to some extent, materials. Industrial cooking equipment consists of large-scale pieces like steam-jacketed kettles, large convection ovens, and tunnel ovens, together with oversize utensils (stirrers the size of canoe paddles, for example), containers, racks, and dollies.
Restaurant Cooking. On the other hand, restaurant cooking equipment has to meet other requirements. All of it, from the range to the whisks, must be easily cleaned and meet sanitary regulations, just as with industrial cooking equipment.
But restaurant cooking is characterized by rapidly making a wide variety of dishes in small to medium quantities. So restaurant cooking equipment must be sturdy enough to withstand constant use, pots and pans have to be designed to stand up to the high-power burners of commercial stoves, and so forth.
Home Cooking Gear. Cooking equipment designed for the home, even if it is styled to resemble commercial cooking equipment, is made for the household environment. The commercial kitchen generally has powerful (and noisy) ventilation equipment, a fire suppression system, and walls that can be cleaned with high pressure steam, none of which are usually found in the home kitchen. So household stoves don't get as hot, open flames don't leap as high, and cooking usually proceeds at a more leisurely pace.
Camp And Outdoor Cooking. Outdoor cooking equipment, whether you grill or barbecue, has come a long way in the last 30 years, and so has outdoor cooking. Nowadays you have the choice of a charcoal, hardwood, gas, or electric grill . Some come equipped with a smoker, warming shelves, and other features to let you show off outdoors as well as indoors.
Campfire cooking equipment is often cast iron cookware plus a fire, if weight is not a consideration, because cast iron cookware does a great job of evening out the fluctuations in the temperature of the fire. But camp and outdoor cooking equipment designed for backpackers has to be lightweight, so a compact aluminum cookware or titanium cookware kit is often the right choice.
