A griddle can be as simple as a square or rectangular pan with low sides, with or without a handle, that sits over either one or two of your stove burners or else sits on your outdoor grill. Griddles can also be a standalone electric griddle appliance, an integral feature of your stove, or a used commercial gas griddles that you drag out of your garage for large outdoor get-togethers.

A griddle should be flat. If you're looking at used restaurant equipment on behalf of your church or volunteer fire department, stay away from electric griddles that are warped, as these cause no end of grief to the grill cook. Household gas griddles of all types rarely have this problem, though.

Griddle

Most electric griddles for household use have nonstick coatings and are meant to be used at low to moderate temperatures. If you are going to use your griddle primarily for cooking bacon, pancakes, and French toast, then a nonstick coating is fine. Otherwise, look for a cast iron griddle. Although round griddles are available, a square or rectangular shape is much more practical, particularly for that bacon and French toast.

If you are buying a gas griddle to use on your stove, look for one with a thick aluminum bottom. This helps distribute the heat to the corners, so you can cook evenly over the whole surface. With a griddle that sits over two burners, keeping the temperature even front to back can take a little practice; on most stoves you'll be working with two different burner sizes, and the larger one needs to be dialed down a little lower than the smaller one. On the other hand, you can do the cooking on one end and just use the other end to hold cooked food hot.

Your home kitchen requires solid, comfortable feeling cookware supported by accessories like food processors for food preparation, sauté pans for special slow cook items, and a reliable griddle for so many cook top meals like pancakes and French toast.
