When big size is needed such as around the Holidays, buy a turkey roaster large enough to hold the biggest turkey you ever plan to roast. A rectangular 16 by 12 inch George Foreman roaster will accommodate a 24-pound turkey. A Nesco roaster designed as an oval 13 by 10 inch pan will hold up to a 6-pound roasting chicken.
Before dashing out and buying, say, a high quality Rival roaster oven , make sure that the roaster pan fits inside your oven.
When shopping online consider either roaster ovens or even electric roasters, depending upon the size of the meal as well as the counter space you have when considering a counter top model. An electric roaster is a standalone cookware appliance that can come in handy if you have one oven and a big menu.
A turkey roaster should be of heavy construction, with a flat bottom, made of a material that you can put on the stovetop. A nonstick finish for roasting pans is superfluous and it interferes with gravy production to the extent that drippings don't brown well and you can't vigorously scrape and stir to make the gravy. Most roasters are constructed of heavy aluminum, either cast or drawn, and they're fine. However, if you have an induction cooktop, you'll need one that has at least one ply of ferrous metal (cast iron, carbon steel, or so-called magnetic stainless steel).
Do you need a covered roaster? It depends. If you make large pot roasts (bigger than you can fit in a Dutch oven), you want a covered roasting pan. If the only thing you ever use it for is turkey once a year, you can get by with the low-profile open style.
