Any Saucepan will do when all you're doing is heating up some chicken soup for lunch. But if you're serious about making sauces, you need a number of good Saucepans. Saucepans should have a non-reactive cooking surface (tin, stainless steel, hard-anodized aluminum, or nonstick aluminum) and should have excellent heat distribution (copper or aluminum body or cladding).

A Calphalon stainless steel Saucepan would be your preferred choice over other material, such as enameled or seasoned cast iron, bare aluminum, glass, and ceramic, may be usable for many tasks.

However, Saucepans constructed out of iron, glass and ceramic do not have the quick heat response needed for delicate sauces. And a bare aluminum Saucepan would be too reactive; it can cause off-colors and a metallic flavor in many kinds of sauce. You can get by with a heavy-bottomed Saucepan that does not have full cladding. However, adding cladding to the heavy-bottomed Saucepans distributes heat up the sides of the pan and helps cook the sauce more quickly and evenly.

Sizes of Saucepans

As you fill-out your home cookware set needs, you do need more than one Saucepan , if for no other reason than you need at least a couple of sizes. Most people have at least one two-quart pan and one three-quart pan in their kitchenware. In the course of cooking dinner, you might be cooking vegetables in one Saucepan, rice in another and a sauce of some kind in a third, with a sauté pan on the fourth burner.

If you choose to buy nonstick cookware, look for a Saucepan with a nonstick surface that's guaranteed scratchproof with metal utensils. You're more than likely going to be using a wire whisk in it; so plan ahead.
