Silicone cookware and silicone bakeware is just beginning to gain some traction in the marketplace. Okay, traction may be the wrong word for something so slippery. But that's the point. It does have certain advantages for the home baker, and new silicone products are being introduced all the time.
For one thing, silicone bakeware is flexible. You might not need to fold it up and stick it in your pocket, but you can save storage space taken up by infrequently used baking pans.
The real advantage of a silicone bakeware set, though, is in popping muffins and cupcakes out of their cups, releasing a Bundt cake from its cake pan, and turning out molded desserts. Just remember to support silicon bakeware on a rigid metal baking sheet in the oven, unless it is a brand with an enclosed metal frame for rigidity.
Silicone cookware is showing up in more and more pot handles and hand tools, too. Again, the surprising heat resistance, the ability to go from freezer to oven, the ability to distribute heat evenly, the flexibility (for comfort), and the easy-release surface are all advantages unique to silicone bakeware.
One novel use for silicone baking sheets is that they make great peels for sliding bread or pizza onto an oven stone, especially for high-hydration doughs.
