Wood cutting boards are probably the most common type. A wood cutting board should be made of a good hard wood, but one that has some give. Woods like oak, birch, and maple, or olive cutting boards are durable and look great. Bamboo cutting boards are also excellent, and have an interesting, exotic look.

Wood cutting board care is fairly easy. Wood cutting boards should be cleaned thoroughly after each use. They should also be oiled with mineral oil about once a week to keep the wood in good condition. Wood should also be cleaned with a disinfectant after using it to cut meat and poultry. A small amount of bleach mixed with water works well for this task.

New studies have shown that bacteria lives longer on cutting boards of plastic vs wood cutting boards. It is important to keep all parts of the cutting board, especially the marks made by the knife, very clean. It also recommended that a kitchen have at least two cutting boards, one for meat and poultry, one for bread, vegetables, fruits, and anything else.

Although wood butcher block cutting boards prolong the life of the knife, there is some evidence that glass cutting boards or stone cutting boards may be more hygienic cutting surfaces than wood. It is fine to use a stone or glass cutting board as long as the knife edge has very little contact with the cutting board, especially if you are using a ceramic knife.

Also, decorative glass cutting boards, like a Counter Art cutting board, or fine stone cutting boards, like a marble cutting board, can be used for hot pads or simply as a stylish touch, while other cutting boards get the hard use.
