In France, the name Sabatier must be registered with a second name, for example Sabatier Diamant. In the Untied States, this is more complicated, because Sabatier is used by many brands trying to use the reputation of the famous Sabatier knife.
Authentic Sabatier knives are made in France, using a process for shaping and forging developed in the 1800s. Many companies using these techniques were founded around the same time, centered in or near the town of Thiers in France.
The Sabatier brands were named more than one hundred years before France passed laws about intellectual property, so the multiple brands were allowed to use the name Sabatier in conjunction with another word.
Because of this complex and often confusing history, there are many different Sabatier knife companies in existence.
The Sabatier companies in France make excellent products. Some of the most famous are Sabatier Provence, which makes excellent, reasonably priced Sabatier knife sets. Because of the brand name confusion, it has been easy for cheaply made knives to be sold in the United State and elsewhere using the Sabatier name, but without the quality and workmanship that made the Sabatier knife famous in the first place.
